Vegetarian and vegan cafe on Happo, attached to Evergreen International Ski School. Local veg, organic when they can, fair-trade drinks. The useful on-hill lunch if your kids are in Yeti Club. Their website still has a 2020 closed banner, so don’t trust the hours — call 0261-85-0034.

Chef Shingo Suzuki tasting-menu room in Echoland. Their website currently says COMING SOON with hours TBD. Last published season they did vegetarian and gluten-free with notice, a child portion, and said they cannot do vegan. Book via TableCheck when open — not a walk-in burger.
