Vegan Hakuba is a short list. Here it is without the brochure.

Hakuba is not vegan-easy. These are the places that actually say they do vegan, vegetarian, or gluten-free. We haven’t eaten every dish — call before you go.

Three vegan-friendly kitchens we can name: Roots Cafe, Tierra, Hige Cafe.

Roots Cafe

Vegetarian and vegan cafe on Happo, attached to Evergreen International Ski School. Local veg, organic when they can, fair-trade drinks. The useful on-hill lunch if your kids are in Yeti Club. Their website still has a 2020 closed banner, so don’t trust the hours — call 0261-85-0034.

Daytime. Happo, inside Kokusai Lodge, next to Evergreen. Useful if your kids are in Yeti Club — see Hakuba with kids. Confirm hours — their site is stale.

VIVE

Chef Shingo Suzuki tasting-menu room in Echoland. Their website currently says COMING SOON with hours TBD. Last published season they did vegetarian and gluten-free with notice, a child portion, and said they cannot do vegan. Book via TableCheck when open — not a walk-in burger.

The published gluten-free room. Vegetarian yes. Vegan no — they say so. Book it as the trip dinner, not as a backup on a storm night.

Hige Cafe

In winter they run as a kushikatsu izakaya with a claimed separate vegetable fryer. Hours irregular. Ask a day ahead for dietary requests. Call before you walk over from Echoland Main Street.

Meteor Dining

Forest dining a short walk from Echoland (Kakashi no Kakurega at Pension Meteor). Winter hours on their website. Creative tonkotsu udon with Shinshu veg, and Luna organic raw cakes that are vegan and gluten-free as dessert — that is a dessert, not a full vegan kitchen.

Meteor’s vegan thing is a dessert, not a meal. Don’t book it as your vegan dinner.

Vegetarian is easier than vegan

Vegetarian is easier than vegan. These places at least say they can do it. Sushi Sakai is a ten-seat omakase. Gogh is eight seats. Blizzard Pizza and Marillen (the old Bernd's Keller) are the family-table versions. Full vegetarian list on Eat tonight.

Gluten-free is one published kitchen

VIVE is the one kitchen that actually says they can do gluten-free. Meteor’s GF mention is dessert. If coeliac is the trip constraint, email VIVE and ask the kitchen; do not trust a blog list from 2019. Gluten-free list.

Questions people actually ask

Is Hakuba vegan-easy?
No. It is workable if you stay in Happo or Echoland, book the rooms that actually publish vegan or vegetarian options, and confirm Tierra before you taxi to Misorano. Do not assume izakaya dashi is vegetarian.
Can VIVE do vegan?
They say they cannot. They do publish vegetarian, gluten-free, and a child portion of the tasting. That is a booked night in Echoland, not a walk-in.
Does Tierra publish hours?
Not in English that we can trust. The public English listing is HappyCow, last updated 2024. Confirm before you taxi out to Misorano.
