  • Vegetarian and vegan cafe on Happo, attached to Evergreen International Ski School. Local veg, organic when they can, fair-trade drinks. The useful on-hill lunch if your kids are in Yeti Club. Their website still has a 2020 closed banner, so don’t trust the hours — call 0261-85-0034.

  • Vegan ramen in Misorano. Hours aren’t current — confirm before you taxi out to Misorano. Still the name people give when you ask for vegan dinner that is not Roots Cafe.

    Chef Shingo Suzuki tasting-menu room in Echoland. Their website currently says COMING SOON with hours TBD. Last published season they did vegetarian and gluten-free with notice, a child portion, and said they cannot do vegan. Book via TableCheck when open — not a walk-in burger.

  • Wadano burger-and-coffee room 150 m from the Sakka slopes. Breakfast through dinner in winter, pool table, live music. Hakuba Hospitality Group. The default Wadano no-car dinner if you do not want yakitori.
